Pork Quince

 1 kg boneless pork loin
 1 kg quince peeled and cut in quarters
 ½ cup of olive oil
 1 medium onion finely chopped
 3 carrots peeled and chopped in cubes
 ½ cup of orange juice
 some rosemary
 1 bay leave
 1 cup of white wine
 salt, pepper

In a pan for the oven, you do the meet and the quince. Add all the ingredients and mix very well.

Cover the pan with a lid or aluminium foil and bake at 180 C for approximately 11/2 hours or until the meat is tender. Take of the lid or the aluminium foil ½ hour before you take it of the oven, so it gets a nice color.
