Easter Cookies

 1 kg of soft flour
1 ½ cups of powdered sugar
 1 cup of butter
 1 cup of orange juice
 4 egg yolks
 2 tbsp of baking powder
 1 tbsp of honey
 ½ tsp of vanilla powder
 1 tsp of orange zest

In a bowl, mix the flour, baking powder, orange zest and vanilla.

Beat together butter, powdered sugar and honey until the mixture turns white and fluffy. Add 3 egg yolks, one at a time, and continue beating.

Reduce the speed and slowly mix in the flour and the orange juice. Continue beating until the mixture doesn’t stick to the walls of the bowl.

Cover the bowl for approximately half an hour and then knead the dough into various shapes.

Grease a baking pan with butter and arrange the cookies so that they are an inch apart.

In a bowl, whisk the last egg yolk with some water. Use a pastry brush to apply the glaze on the cookies and then bake in a preheated oven at 1800 C for approximately 20 minutes.

Once cool, remove the cookies from the pan and serve with coffee or tea.
