Chocolate with pistachios

 5 ½ cups of coarsely chopped pistachios
 5 ½ cups of crème fraîche
 400 g of dark chocolate
 1 tbsp of butter
 4 tbsp of cherry liqueur
 3 tbsp of icing sugar
 2 cups of crumbled Petit Beurre biscuits

Heat the crème fraîche in a saucepan.

Remove the pan from heat, add the chocolate and stir quickly until thoroughly melted.

Combine 1 tablespoon of butter with icing sugar, crumbled biscuits, cherry liqueur and half a cup of pistachios.

With a wooden spoon, thoroughly stir all ingredients until well blended.

Pour the mixture into a deep glass bowl. Cover it with cling film and leave it in the refrigerator for approximately half an hour.

When the mixture becomes firm, remove it from the refrigerator and using a small spoon, create little chocolate balls.

Place the remaining pistachios in a small pan and then cover them with the chocolate balls.

You may roast the pistachios in the oven first to make them crunchier if desired.

Place the chocolate balls on a platter or in individual paper wrappers for serving.
